Jin Jun Mei is a relatively new addition to the storied history of Chinese teas, developed in the early 21st century. However, it quickly rose to prominence due to its exceptional quality and the meticulous care given to each step of its production. Jin Jun Mei’s creation was inspired by traditional black tea manufacturing techniques and aimed at redefining the luxury tea market with its unique characteristics.
Cultivation and Harvesting:
The tea is sourced from high-altitude regions of the Wuyi Mountains, where the unique terroir contributes to its distinct flavor profile. Only the tenderest buds, plucked during the early spring, make it into Jin Jun Mei. This selective harvesting ensures that the tea is of the highest possible quality, with a complex flavor and a high concentration of aromatic compounds.
Processing Techniques:
The processing of Jin Jun Mei is an art form that requires precision and expertise. After plucking, the leaves undergo withering, rolling, fermentation, and drying processes. What sets Jin Jun Mei apart is the meticulous attention to detail during fermentation, which is closely monitored to achieve the perfect balance of flavors. This elaborate process results in the tea’s signature golden color and a rich array of flavors.
Tasting Profile:
Jin Jun Mei offers a multi-layered taste experience that is both rich and smooth. It’s characterized by its sweet, fruity notes with a hint of smokiness, complemented by an underlying malty richness. The aroma is equally complex, with layers of floral, fruity, and honey notes that entice the senses before the first sip. Its bright, reddish-gold liquor is a feast for the eyes, making every brewing a ceremony of elegance and pleasure.
Brewing the Perfect Cup:
To fully experience the depth of Jin Jun Mei, use filtered water heated to around 90°C (194°F). Steep about 2 grams of tea leaves per cup for 3-5 minutes, according to your taste preference. This gentle brewing method allows the delicate nuances of the tea to unfold, offering a serene and luxurious tea-drinking experience.
