What is white tea?

White tea is a micro-fermented tea, cold in nature, one of the six tea categories 🍃.
Processed without frying and kneading, the finished tea is full of white hairs, so it is called "white tea".

Main production areas
White tea is mainly produced in Fuding, Zhenghe, Jianyang, Songxi and other counties in Fujian Province.

Classification of White Tea
Depending on the variety of tea tree and the tenderness of the raw material, they are classified as White Hair Silver Needle, White Peony, Gong Mei and Shou Mei.

⚪️ White Hair Silver Needle: Created in 1796, White Hair Silver Needle is made from the fat buds of large white tea.

Silver Needle produced in Fuding is dried and called North Road Silver Needle, while Silver Needle produced in Zhenghe is sun-dried and called South Road Silver Needle.

White Hair Silver Needle has a fresh aroma, sweet taste, fresh and slightly sweet flavour, clear and crystal soup colour, light apricot yellow, and a full bud on the underside of the leaf that is fat, thick and soft. It has always been known as the "beauty" of tea👍.

⚪️ White Peony: Created in Jianyang Shui Ji Town, this tea is made from the first unfolding shoots of one bud and two leaves. The green leaves are interspersed with white hairs, and the backs of the leaves hang down and roll up, resembling peonies, which is why it is named White Peony.

The leaf colour is green and white at the back, which is called "Green Sky and White Earth". The soup colour is apricot yellow and bright and deeper than silver needle, the aroma is fresh and fresh with hair fragrance, the taste is mellow and refreshing, the bottom of the leaf is tender and even and soft, the hair fragrance is obvious, the aftertaste is sweet and the taste is fresh and mellow 🍵.

⚪️ Tribute Eyebrows: made from one bud, two or three leaves of Vegetable Tea, the buds are thin and small, and the leaves are large and spreading.

The soup colour is also darker than White Peony, the aroma and taste are not obvious, and the taste is sweet and mellow.

⚪️ Shou Mei: Made from a single leaf peeled off during the "needle extraction" process of making silver needles, it has only leaf blades and a long stalk. The stalk is long and curved, resembling the eyebrow of a longevity star, hence the name.

Shoumei leaves are mature and dark in colour, the soup colour is also darker, the aroma and taste is pure and slightly coarse with the old smell, the leaf bottom is mostly single and red.
